About a year ago I was listening to a podcast.  One host asked the other what she would do differently if money was no object.  She quickly responded, “I would eat Irish butter every day.”  I remember thinking, “What is Irish butter?”  I thought butter was butter.  At that time, I had never heard of Irish butter.  In fact, I thought you had pretty much arrived if you got butter instead of margarine.

Fast forward to last weekend.  Part of the extended family was at an Airbnb in Hayden, Idaho, and we were making omelets.  Right there on the counter were the eggs, cheese, bacon, vegetables and Irish butter.  What?  Evidently, there is such a thing.  I had to try it.  And I wanted it straight, not just mixed in with the omelet.  Well, I have never tasted anything so silky, smooth and rich.  It was delicious.  I decided right then I wanted Irish butter every day.  However, at around $2.00 a cube I was going to have to wait until my ship came in.

So, Ireland has its butter.  Idaho has its potatoes.  Our valley has its beef.  Our family has our green beans.  Louise’s family has her apple pies.  And I’m sure your family has their own taste of home.  Thanksgiving is just around the corner, the perfect time for those family favorites and being grateful for the Good Life.  So, splurge this year and get some Irish butter for your rolls!  You won’t regret it.
